From acclaimed chef and restaurateur Cory Harwell—the visionary behind Carson Kitchen—this stylish newcomer blends craftsmanship, comfort, and creativity in a sleek 5,000-square-foot setting.

Guests can expect high-quality cuts at approachable prices, with signature steaks starting at $36 and prepared through a meticulous three-step process: sous vide, plancha sear, and grill finish for maximum flavor and texture. The menu, led by Chef Scott Simon, pairs playful starters like sour cream & onion bubble bread and peanut butter bacon with standout entrées such as Zabuton steak, sausage rigatoni, and cabbage steak.

Designed by RAD Studio, the restaurant’s moody yet welcoming aesthetic features a bar, lounge, private dining rooms, and an expansive 1,800-square-foot patio. The concept’s name—drawn from the “wine thief” used in winemaking—embodies its philosophy: celebrating balance, indulgence, and approachability in every bite and sip. Designed with both luxury and approachability in mind, Butcher & Thief is set to become Southwest Las Vegas’s newest culinary destination.
