A Space Designed for Gathering and Staying Awhile

Located at 8670 W. Sunset Road, Suite H100, the 5,000-square-foot restaurant balances sophistication with warmth. Inside, guests will find a lively bar, a relaxed lounge and private dining rooms ideal for celebrations or business dinners. Meanwhile, the expansive 1,800-square-foot patio—plus an additional private outdoor dining room—creates a perfect setting for Vegas evenings under the desert sky. Whether you’re planning a casual lunch, date night or group dinner, the space adapts effortlessly.

Starters That Spark Curiosity from the First Bite

Dinner begins with appetizers that immediately set the tone. Blistered shishito peppers arrive bright and zesty with ginger salt, lime and togarashi. Meanwhile, peanut butter bacon delivers an unexpected salty-sweet punch layered with jalapeño cucumber jelly. For comfort with a twist, cheesesteak eggrolls wrap familiar flavors in a crisp shell, paired with natural jus for dipping. In addition, the cold bar keeps things fresh with jumbo shrimp, icy oysters and a vibrant hamachi crudo finished with yuzu soy, pickled jalapeño and jicama.

Salads and Steaks That Refuse to Be Ordinary

Rather than serving as an afterthought, salads stand confidently on their own. The chopped Italian feels crisp and nostalgic, while the triple thick bacon wedge leans indulgent with housemade pickle ranch. Even the classic Caesar gets a bold upgrade thanks to bacon fat croutons that add smoky depth.

At the heart of the menu, premium steaks shine. Sourced from Creekstone Farms, Akaushi Beef and Allen Brothers, cuts like the Zabuton, ribeye and filet mignon undergo a meticulous three-step process. First, chefs use sous vide precision, then sear each steak on an 800-degree plancha, and finally finish it on the grill. As a result, guests enjoy exceptional tenderness and flavor—without the intimidating price tag often found at traditional steakhouses.

Comfort-Driven Entrées, Elevated Sides and Seafood Standouts

Beyond steak, the menu continues to impress. Seafood selections such as steelhead trout, branzino and scallops arrive bathed in rich brown butter piccata sauce. Meanwhile, entrées like roast chicken thighs lacquered in jus, sausage rigatoni with tomato gin, and a double cut pork chop with caramelized apple butter glaze balance comfort with creativity.

Sides keep the momentum going. Expect playful upgrades like asparagus with pistachio and hard egg, Boursin and garlic mashed potatoes, and a smoky five-cheese mac and cheese that begs to be shared.

Wine Made Approachable, Social and Fun

Wine plays a central role at Butcher & Thief, starting with a list that feels inviting rather than intimidating. The restaurant offers 24 bottles organized by flavor profile—from light and fruity to big and bold—so guests can explore with confidence. Additionally, 12 wines by the glass and one-liter carafes of red and white house wines encourage sharing and lingering at the table. Not surprisingly, the restaurant’s name nods to the “wine thief,” a tool used to sample aging barrels, symbolizing the joy of savoring life’s best moments.
